i love cheese pimiento a lot but i haven't tried making it from scratch. also, i haven't eaten this in a long time. i am going to try to make it this weekend so it will go with my fresh baked pandesal. i've learned how to bake pandesal so when i feel like having some, i just bake them instead of buying from the filipino store. the smell in the kitchen is so heavenly when the pandesal are almost baked...

Hi! Someone gave me quezo de bola (and it's months after Christmas!). None of the kids like quezo de bola but they like cheese pimiento (the kind you buy at the supermarket:). So, I'm trying this one.
Thanks,
Byang

zeph, many large groceries sell bottled capsicum or grilled sweet peppers in the condiments section. Actually, they are really easy to make from scratch, I think I have a post on roasting capsicums in the archives...

The first and last time I tasted home-made cheese pimiento was when I was in 6th grade. I recently had the urge to try and make one when an officemate brought a cheez whiz pimiento spread to work. I used grated cheddar cheese (i couldn't find QDBs anymore), grilled capsicum, mayo and crushed pineapple. Yum!

I should try making chunks like you do next time. Btw, where does one get bottled capsicum?
