Marketman, whenever my husband and I grill we usually make the eggplant and tomato salad. We flavor ours with onions, patis and cider vinegar. In Guam, where I grew up, the roasted and peeled eggplant are left whole with the stem on and a dressing of coconut milk, vinegar or lemon and chili peppers (as hot as you can handle) is poured over them. I like it with the coconut milk better, but it doesn't agree with my husband so we do the eggplant and tomato more. Your post makes me want to grill soon...hmmm, maybe Sunday!
