Marketman, whenever my husband and I grill we usually make the eggplant and tomato salad. We flavor ours with onions, patis and cider vinegar. In Guam, where I grew up, the roasted and peeled eggplant are left whole with the stem on and a dressing of coconut milk, vinegar or lemon and chili peppers (as hot as you can handle) is poured over them. I like it with the coconut milk better, but it doesn't agree with my husband so we do the eggplant and tomato more. Your post makes me want to grill soon...hmmm, maybe Sunday!

marinel, really simple. Just roast the eggplants over a charcoal flame or gas flame on you stovetop until skins are charred and meat is soft. Peel the eggplants and chop up the pulp. Add chopped onions, tomatoes and a chilli vinegar and season with salt and pepper. Garnish with chopped chives of green onions...it is a classic and frequently seen on our lunch or dinner table... actually, I think I have a post on it in my archives
