kongwi i agree with you ...and i think kapampangan culinary competency is just a little overhyped...thus bypassing other culinary centers of the country like the tagalog provinces like laguna, batangas, bulacan, rizal, quezon, cavite , the bikol region and iloilo and bacolod in the visayas which contributed many mainstream dishes that is enjoyed by filipinos today...i also suggest food tour organizers to try indigeneous filipino muslim cuisine down south...

i'm a kapampangan and i'm one of the organizers of a food tour (viajeng cucinang matua - alquimista tours) that takes tourists to old kitchens in pampanga... there's another food tour in pampanga, more upscale and highly recommendable being organized by some food/travel bloggers... my take is, each region can develop their respective food tours... it's a matter of awareness... i'm pretty sure there's a house or an eating place somewhere in Nueva Ecija that would whip a good dish or two, something that is not found in manila restaurants... the Tagalog cuisines of Bulacan or Batangas, the Pangasinense and Ilocano cuisines have their individual and unique strengths and i'm sure have developed their culinary identity... one thing i noticed during one of our tours, it's the information and stories around the dishes that elicits interest from the tourist... so little know facts about a particular dish is a must... i believe that when one is open to eating the food of different regions and different cultures, he is also open to listen to other people's views and become less judgmental...

The kapampamangans have quite rightly earned such a good reputation for their cuisine, so much so that in olden days cooks from Pampanga were sought after to prepare large celebrations.
I wonder how many other regions have developed a culinary identity, for instance is there a Visayan cuisine? or Pangasinan? What about distant regions from Manila, such as Isabela and Nueva Ecija? We must not forget Mindoro and Masbate. There may be culinary treasures waiting to be uncovered!
