Wow, what a sight! When I traveled back to Mla in '94, I attempted to cook my hubby's favorite (Spaghetti Puttanesca) and looked, in vain, for suitable ingredients. I couldn't even find the requisite red pepper flakes and had to settle for some hot sauce instead; no anchovies either, I used patis; and no kalamatas, so I used green olives. Needless to say, his relatives had to wonder how that came to be his favorite dish, when he had always been known as a picky guy. A dreadful experience and totally burned me out of cooking anything else. But with all these choices now available, cooking in Manila should be more fun next time we come! Valrhona too, huh? I am much impressed and delighted.
