I lucked out and found a good butcher near me who still sold meaty (1&quot; of meat on the bones) beef ribs (most supermarkets sell them as short ribs but they&#039;re already sliced for bulgogi). I tend to put a dry rub/cure at least overnight then cook them by indirect heat over my grill, using a foil pouch filled with mesquite chips to add the perfect smoke ring.  After about 6 hours of cooking at about 225º they come off the grill, in the words of the old Purefoods hotdog ads say...tender, juicy and very darn tasty!  I do feel like Fred Flintstone tucking into those.  1 rib will easily feed a very hungry person.]]></description>
