Just the ramen dishes, though. I lament the absence of gyoza. Yushoken's is my absolute favorite.

Hi MM,

Thanks for coming to Ramen Yushoken.

First and foremost, I would like to personally apologize for the hair incident. We have safety nets in place to prevent these things from happening, but as you know, it still can happen. Our manager felt bad that she wasn't able to approach you to personally apologize, as she normally is very good at that. She knew about it and meant to approach you before the bill came, but for reasons beyond her control that day, wasn't able to.

Regarding the drinking water, we installed an elaborate water filtration system that allows us to control the quality of the water we serve as well as use in the kitchen. It cost us a pretty penny and compared to ordering filtered water from a supplier, the cost of water is pretty level. With the volume of drinking water we give away, thanks to the self-service water pitchers we place at each table and the high volume of customers, it only makes sense for us to find a practical and sustainable drinking water solution. This same filtration system allows us to have clean water for cooking our noodles and washing our food ingredients. To be honest, that's the primary reason we went for a filtration system.

BTW, we recently changed the recipe of our karaage, I hope you can return to try it out and give us feedback.

Lastly, I need to state that we don't use MSG at all in our restaurant. In fact, we don't even salt anything. The only salt we have is the Sicilian sea salt we serve alongside the karaage.

Thanks again, we really appreciate this post.

Since they opened, Ramen Yushoken is my go-to ramen place. Hurts not one bit that it's a hop-skip from home. :)

MM, when you get the chance please have my two favorites: the miso ramen (drizzled with some of that chili oil) and the shoyu maze soba. The latter is not on the menu, and I would ask first if it's available before setting my heart on it. The egg yolk coats the noodles like a tender embrace; it is silky in the tongue and your teeth will revel in the "bite" of the slippery skeins of noodles. Oh my, I got hungry just thinking about it.

Am glad you enjoyed your meal at one of my favorite restaurants.

I believe they don't allow take outs and limit the number of bowls served in a day. Yushoken changed the way I looked at Ramen.

I know the feeling of having to find hair in one's meal. I also understand that there are many reasons that cause hair to fall into one's meal and most may not even be the resto's fault (passing customers, clothes, etc.) I also agree that it's how the staff handles these situations that make or break the life of a resto. In the end, it's the whole dining experience that matters.

I would have to agree that their Hiyashi Chuka is quite good. The next time you visit you should try the Shoyu Maza Soba, dry noodles with bean sprouts and cabbage, chasu, back fat and a raw egg. Winner!!!!

I heard that they have a limited number of bowls per service so it's a good thing they still had some for your late lunch. I haven't had the chance to eat there yet as my whole family prefers the Japanese restaurant beside it.
