I definitely believe in this line MM “Sure there are technical and scientific parts to cooking, but I really believe that food made with passion and love will almost always triumph over pure technique…”

Even Mario Batali reiterates to his chefs/cooks at Babbo that “People should think there are grandmothers in the back preparing their dinner.” I also remember watching a show of Jamie Oliver. He was so frustrated that he cannot win the hearts of the local Italian folks he tried to cook for because for them, their grandmothers/mothers/aunts are still the best cook.

Btw, Marcella Hazan’s autobiography ”Amarcord” is a fascinating read about a very fascinating woman. A definite must-read for her fans.

The pictures made me want veal shanks! On another note, prayers to you and your staff in Cebu. We just heard about the earthquake and hope recovery is quick and damage is very minimal.
