					<description><![CDATA[Speaking as a butcher, I can see that that &quot;liempo&quot; definitely isn&#039;t belly. The streak of litid that runs through the center of the round cut of meat is seen in the kasim part of the pork. Even the shape of the whole thing looks like the extension of the porkchop in the kasim area. 

Grabe, I have never heard of this stuffed liempo! Will definitely try these when I get home next year!]]></description>

I even find andok&#039;s better than mr liempo.  that being said, balamban liempo is tastier, though it is because of all the herbs and spices that is expected in balamban style roasting.  but i do agree with your findings on the pink meat more from undercooking than nitrites.  there was a time when while i was waiting for my order, they had to put it back in the grill when upon the first slice, they noticed it was still undercooked.  because i had it sliced, they noticed it, unlike in your taste test, it was sliced outside of the eatery/grill station.  it seems that the roaster(or whatever you call the one grilling) still has a long ways to go to establish a standard on when a liempo is well done or properly roasted.	]]></description>
