It would be interesting to attend the Duman festival of Santa Rita Pampanga, which is held every November or December of each year. Newly-harvested duman or pinipig - the genuine - not the fake ones usually sold in tourist markets where they add sugar to malagkit and color the grains green - can taste heavenly by itself. It also goes very well with good, hot tablea or chocolate drink, or with freshly-squeezed coconut milk. Anyway, while in Santa Rita you can ask around for households that cook/sell those humongous pork chicharon - i want to faint everytime i remember how good newly-cooked ones smelled hahaha. Some very nice traditional pastries as well. don't forget the town market where they sell alimango and hipon - so fresh and nice in the mornings. Now, i'm getting hungry and will probably pay the town a visit one of these days.
