					<description><![CDATA[Callos was love at firts bite the first time I visited my husband&#039;s Bacolod origin.  Had tried several recipes since then and had  pretty good success.  This is very similar to the Mexican menudo soup and also what they call caldo de res.  Lately,  I had tweeked from just using honeycomb tripe to adding some chopped cooked beef tendons.  Because of the time it takes to prep the tripe, would usually cook a big batch and portion half of it in smaller freezable containers so anytime my hubby or I get the callos craving, we can just defrost and heat and enjoy it.  Never last more than a couple of weeks though.]]></description>

I&#039;ve been bugging my mom to teach me how to cook the family recipe (really old-school stuff, she even remembers they used to tenderize the tripe at barely simmering). She said she will - when I get around to coming home for more than a weekend visit.]]></description>
